Gnocchi recipe


Ingredients (for 4 people):
4 Potatoes
4 cups (500g) Flour 
1 Egg
Salt

Extra flour for kneading


Bring water to boil in a big saucepan.


 Meanwhile wash, peel & cut potatoes into medium sized chunks.


Boil potatoes for 15 minutes or until fork tender.

  
Drain water and put potatoes back into the pan.


Mash the potatoes thoroughly until very smooth.


Let the mashed potatoes cool.


Form the potatoes into a big ball. 


Add half the flour.


Form a mould and add the egg.


Add some salt.


Start mixing the potatoes, flour, egg and salt. Keep adding flour until all four cups of flour are used up.


Knead the dough until it is smooth and no longer sticky.
Roll it into a thick roll and cut into four pieces.



 Roll out each ball into a one inch thick roll.



Cut the roll into 1/2 inch wide pillows.



Lightly push a fork into the gnocchi. 


Let the gnocchi rest in flour for 20 minutes to dry a little.


Cook the gnocchi in boiling water.
The gnocchi are ready once they have risen to the top.
