Butternut Squash Soup

                

Ingredients:
400g Butternut Squash
500ml Vegetable stock
50ml Cream
2 tbsp Oil
3 tbsp Butter
Salt & Pepper



Peel, cut and deseed the butternut squash into small pieces.


Heat the oil in the saucepan.
Add butternut squash pieces and butter.


Fry for a few minutes until it turns golden. 
Add the stock.
Bring to boil.
Reduce heat and let it simmer for 25-30 minutes. 


Blend the soup.
Add the cream and bring back to boil for 2 minutes.


Add salt & pepper.
