Pesto Scampi



Ingredients for 1 plate:

5tbsp Pesto
8 Raw scampi
Rocket
Cherry tomatoes
5 tbsp Oil
1 tbsp Balsamic vinegar
Salt & Pepper


Make the pesto (or use ready made one).


Put the scampi on wooden skewers. 


Cover in pesto.


Heat the pan.
Add 2 tbsp oil.
Add scampi.



Prepare the salad by adding 3 tbsp oil, the balsamic vinegar and tomatoes.


The scampi are ready when they are no longer transparent and they've turned into a white and pink colour.
Add to the salad.
